You may have heard that apples are kind of in short supply this year in Michigan.  My parents have a few apple trees in their yard and there isn’t a single apple on them this year – darn the weather.  When we lucky enough to find some honey crisp apples the other day at the orchard I decided to use an old favorite recipe to make some apple crisp.

This is a really easy and quick recipe  – not to mention delicious.

Ingredients

  • 1 ½ cups quick-cook oatmeal
  • ½ cup brown sugar (packed)
  • ½ teaspoon cinnamon ….sometimes I use a little more
  • ½ cup softened butter
  • 6 cups of peeled and sliced apples – 8 or so apples

 

Steps

Mix the first three ingredients until well blended.  Then add the softened butter and work with your fingers to make the mixture into large crumbs.  Place the sliced apples in the bottom of a greased pan (I use 13 x 8).  Top the apples with the crumb mixture.

Bake at 350° until bubbly – approximately 55 minutes.
