There is a fun contest out there being put on by DIAMOND brand. It runs from December 28th through February 7th. I just went to their website www.snackbowl2011.com and entered. It was fun and easy. You can enter either a photo or a video or a combination of both on why you are the Ultimate Party Host. You can look at the other entries if you need ideas. Once you register you can then go to the website up to three times a day and vote for your favorite entries – after you vote you can play “Pick the Helmet” for a chance at instantly winning a $50 gift card. You can play the game once per day. The entry with the most votes at the end of the contest wins the grand prize. The Grand Prize includes:
8 Trip for 2 to the NFL Hall of Fame in Canton, Ohio
8 Tickets to the enshrinement award ceremony and dinner
8 A Plaque
8 $5000 in cash

We have decided to host a pre Super Bowl party on January 23rd during the playoff game. I thought I would try some of the diamond brand snack foods (Popsecret popcorn, Kettle Chips and Emerald Nuts). The Mexican theme menu will also have tacos, guacamole and nacho chips and soda. For dessert I’m going to make Popcorn Cake. I made this recipe once before – it requires only 4 ingredients and it tastes great.
POPCORN CAKE
½ stick of butter
2 cups mini marshmallows
1 bag of microwave popcorn
½ cup of M&M’s (you could choose your teams colors)
Make the microwave popcorn and make sure to pick out all un-popped kernels.
In a sauce pan melt the butter over medium heat. Then add the marshmallows stirring constantly until it is all melted together.
Stir in the popcorn and sprinkle the m & m’s through out the mixture.
Press into an 8X8 inch pan (or something close in size). Let it cool a bit and then cut into squares.
