Homemade Vanilla Bean Ice Cream

 

Who doesn’t love a bowl of yummy ice cream?  With this recipe you and the kids can make your own vanilla bean ice cream and indulge anytime you want! Enjoy!

Homemade Vanilla Bean Ice Cream

Ingredients:

  • 1 1/4 cups milk
  • 3/4 cup heavy cream
  • 1 vanilla bean
  • 6 large egg yolks
  • 3/4 cup sugar

Directions:

Combine cream and milk in a medium saucepan. Split vanilla bean in half lengthwise, and scrape seeds into milk/cream mixture then add vanilla bean pod to milk mixture. Over medium heat cook 6 minutes or just until bubbles begin to form around the edge of pan.  Be sure to not leave the mixture alone and stir often. When ready, quickly remove from heat.

Next:

Combine egg yolks and sugar in a bowl and beat at medium speed with an electric mixer until mixture is thick and pale in color. Whisk in hot milk mixture and cook whisking constantly, over low heat, for 2 minutes or until custard mixture is thick and rich. Pour custard mixture through a wire-mesh strainer into a medium bowl making sure the vanilla bean pod stays on the strainer and does not enter the mixture. Place bowl in a larger bowl filled with ice, and stir custard until it cools completely. Pour mixture into a freezer friendly container and freeze. May take up to 3 1/2 or 4 hours to thoroughly freeze.
