Mueller's Hidden Veggie Pasta

I know it seems a little sneaky, but sometimes you have to do what’s necessary to get your kids to eat their veggies.  I love the idea  – even as an adult that likes to eat vegetables – it’s an extra bonus if there are veggies in the pasta!

Mueller’s has just come out with a new line of pasta called Mueller’s Hidden Veggie.  It comes in thin spaghetti, spaghetti, twisted elbows and mini penne.  There is a full serving of veggies in every 4 ounce portion.

The pasta is made with carrots, sweet corn and squash!  It looks the same as regular pasta, cooks the same as regular pasta, has the same texture as regular pasta and tastes the same as regular pasta.   I did a taste test with my husband and he noticed no difference.  One of my favorite son’s favorite dishes is pasta with butter and parmesan cheese….. carbohydrate, no veggies until now.  He liked it too.

To be honest, I’m not much of a cook! I do make pasta at least once or twice a week for lunch and/or dinner, but it’s usually nothing special! Recently, in an attempt to try something different besides the same old marinara + pasta, instead I added butter, almond milk, and parmesan to the pasta…it was pretty good!

One easy pasta recipe I like to make is what I call “southwest” pasta: The sauce is jarred pasta sauce (plain or extra veggie variety is my favorite), salsa, frozen corn, and cream cheese. Mix all together over low heat until combined. Pour over pasta. Add in your favorite protein (I like chicken, but black beans would be great too).
