Last Minute Gingerbread Cookies

Are you in need of some last minute Christmas recipe ideas and don’t have time to prepare them from scratch?  I was prepared to make gingerbread girls and boys from scratch as a project with my girls, but realized that my baking schedule is packed for the weekend.  We usually make yummy Christmas recipes to include with all the gifts we hand out to friends and family.

Thankfully, I found an easy Betty Crocker Gingerbread recipe mix on the festive shelves of Target.  They are super easy to make and perfect as a last minute alternative, just in case you have a pre-Christmas gathering over the weekend.

Ingredients

  • 1 Stick of Butter (softened, not melted)
  • 2 Tablespoons of Water
  • 1 Egg

Things you Need

  • Clean flat cooking surface
  • Flour
  • Rolling Pin
  • Gingerbread Cookie Cutter
  • Preheat Oven to 375
  • Icing
  • Sprinkles

After the dough forms, roll out onto surface about ‘1 inch thick or more.  I like a little extra thickness, makes for fluffier cookies.  Stick the cookie cutters throughout the dough and place onto cookie sheets.

Bake at 375 for up to 10 minutes.  Since every oven is different, you might want to eyeball the time as it may take less than 10 minutes.  Gingerbread tends to burn fairly quickly.

After the cookies have cooled,  add icing decor to the cute gingerbread men (or women) and add sprinkles, etc.  And that’s it.  From the time it took to prepare, bake, cool, and decorate, it only took about 25 minutes tops to complete.  Perfect!

To really add some festive flare, put them in Christmas treat bags or adorable Christmas goody boxes.  These make great last minute Christmas gifts.
