How about celebrating the season with this yummy pumpkin shake – we had it for dessert the other night.  It comes together pretty quickly.

 

Makes 4 servings

 

Ingredients

 

2 cups vanilla ice cream

1 cup milk (I used skim) – or less if you like you shakes thicker.

1 cup pumpkin pie filling

1 cup crushed ginger snaps or graham crackers (reserve some for topping)

2 tablespoons pumpkin pie spices

2 tablespoons brown sugar

Whipped Cream

 

Place all ingredients in the blender and mix until smooth.  Pour into glasses, top with whipped cream and sprinkle remaining crushed ginger snaps on top.
