I have two dessert recipes that I make for special occasions, a double chocolate bundt cake that turns out great every time and this cream puff cake recipe that always gets a ton of compliments.  It is a very impressive dessert with a crust that puffs up nice and golden and a light and fluffy cream filling. I recently made it to celebrate my Dad’s birthday and it was delicious.  The recipe came from Taste of Home Magazine back in August/September of 2010.

The hardest part is making the cream puff – which isn’t really hard it just takes a little time.  I had never made a cream puff prior to trying this cake and so far so good.  I use the white chocolate flavor pudding for the filling, but I think I’ll start play around with a few other flavors like butterscotch or lemon.  As always, read through the instructions before you start and one tip for the crust which isn’t stated in the recipe is to push the dough up the sides of the pan a little bit – maybe half way, that way you won’t end up with a big bubble in the pan!  I drizzled a little chocolate syrup on the top just to dress it up a bit.
